'Eggy' Bread
This makes a great camping breakfast, and also a great evening 'post-wet-day-out' snack!

Ingredients
- Per person:
- 2 slices of bread (can be brown or white, and if slightly stale so much the better)
- 2 heaped tablespoons of gram flour
- Soya milk
- Pinch of salt
Method
- Simply mix the gram flour and salt with a little water into a paste.
- Then stir in soya milk until you have a batter that will just about coat the back of a spoon. (Doesn’t matter if it is a bit thin. If you’re worried about lumps, use a hand-blender.)
- Coat each slice of bread on both sides with the batter, letting any excess drip off, and fry gently in plenty of oil or melted margarine for a few mins on each side, until golden brown.
- Serve with brown sauce, soy sauce, or with fried tomatoes piled on top.
