'Chicken'-style Tofu

This produces slightly chewy, savoury tofu with a slight ‘skin’. Cool, and store in a fridge for up to 3 days. For an excellent bagel, use this tofu and a handful of baby spinach leaves in a toasted bagel, slathered generously with egg-free mayo.

Derbyshire Oatcakes

This is a traditional breakfast food, served as part of a fry-up. They can also be eaten like pancakes, with lemon juice and syrup. Derbyshire oatcakes are very similar to Staffordshire ones, except that they are normally made bigger.

Fresh Ravioli

This is a great way to impress a friend, and proves that you don’t need egg to make fresh pasta.

It has nothing to do with the Peak District - we are just putting it in to show off! This recipe will be included in the forthcoming (contain your excitement) little book: 'The Pirate Rabbits' Cookbook' .

Note: if you can get ‘pasta flour’, use that, as it is even ‘harder’ than bread flour.

Serve with anything you like.
