Long-distance Energy Flapjacks
These are great,and provide lots of energy for hiking. The recipe is pretty foolproof. You may want to add more sugar, if you have a very sweet tooth.

Ingredients
- 150 g margarine ('Pure' works well)
- 300 g porridge oats (in a large mixing bowl)
- 150g sugar
- 2 bananas
- 3 tbsp maple syrup
- 1 tsp vanilla essence
Method
- Put the sugar and margarine in a pan and heat on lowest possible heat until the surface is entirely covered in tiny bubbles, to make a kind of runny toffee.
- Remove from heat and stir in the vanilla essence and the maple syrup (use normal syrup or date syrup if you are trying to save money).
- Mash the banana.
- Put the toffee mix (while still hot) and mashed banana into the bowl of oats. Mix well and quickly.
- Put into a rectangular baking tin/tray and bake at gas mark 5 for about 15-20 min, until the surface looks dry and the edges are starting to turn golden brown.
- Cool, then cut into squares/rectangles.
